In 2017 I underwent surgery to remove a 5cm tumor from my colon which was stage 2 cancer. I was fortunate that it didn’t break through the third wall of my colon and hadn’t spread to any of my lymph nodes. The Oncologist didn’t recommend any chemo or radiation, but I needed to have quarterly blood work and continual CT scans and checkup. I am now going into the end of my third year cancer free. That is such a scary word that even typing it gives me pause.
Then in 2019 my Gastroenterologist found a mass on my esophagus. Fortunately after having it removed, the biopsy came back as benign. I was diagnosed with gastroesophageal reflux disease (GERD). I was put on PPIs (proton pump inhibitors) and a strict diet. Following this year’s (2020) endoscopy I was allowed to re-introduce some foods back into my diet.
I try to listen to divine guidance and was led to watch the documentary, Forks over Knives. That became the start of my whole plant based foods journey. I do admit I am not a whole foods purist, as I do allow myself small amounts of olive oil, avocado oil, and of course, Earth Balance spread. Other than these exceptions, I follow a healthy lifestyle that eating whole plant based foods brings.
Another benefit I have gained from following a whole plant based foods lifestyle are my health numbers. My blood pressure went from 138/82 to 112/68; a1c went from 6.1 to 5.7; and my cholesterol went from 330 to 240. (We’re still working on bringing that number down to 158.)
